Holy moly, the release of the century … CHIPOTLE GUACAMOLE! I couldn’t believe my eyes when I first saw the Yahoo! article, but I didn’t hesitate pinning it, because if I learn one new thing this summer, I want it to be how to make Chipotle Guacamole! So Paolo and I planned a movie and mexican night and I got to cookin’. Now, let me be honest, I love to cook/bake … but I am what I would call a lazy chef. I don’t enjoy chopping and dicing tiny pieces of food, so I have added my ‘lazy girl’ tips below.
CHIPOTLE GUACAMOLE
INGREDIENTS
-2 tbsp cilantro
-2 ripe has avacados
-1/4 cup red onion (~1/4 large onion)
-2 tsp lime juice
-1/2 jalapeno {1 small jalapeno}
-1/4 tsp kosher salt {or sea salt}
LAZY GIRL INSTRUCTIONS
1)Pluck cilantro leaves from stems, cut large sections of the {1/4 of red onion} and jalapeño. Combine these three ingredients into a food chopper and process until it is ‘finely chopped‘ {this short cut will save you so much time and maybe a pinky compared to finely chopping with a knife!}
2) Cut the avocados in half and peel them into a mixing bowl. I like to use a spoon and swivel around the outside slightly squeezing the avocado out. Don’t forget to remove the pit using the same spoon technique.
3) With the back of the spoon mash the avocados into your desired guacamole consistency {I prefer mine a little bit chunky.}
4) Mix in the lime juice and salt.
5) Mix in the ‘finely chopped‘ ingredients from step one.
AND Voila! You have fresh homemade Chipotle Guacamole! If you are an avocado and Chipotle enthusiast like me, this is recipe will be on repeat for you all summer long too!
disclaimer: I altered the recipe by using a 1/4 of a large onion instead of measuring a 1/4 cup, a whole small jalapeño instead of 1/2 jalapeño to give it a bit more of a kick, and I used a food processor instead of chopping my ingredients by hand.
